Try this! Avocado halves make an excellent cup for poached eggs. Add a nest of fresh prosciutto in the avocado before topping with the egg and when you slice the egg the yolk will run just enough to make each bite perfect. I always, always, always, use Himalayan salt and fresh cracked pepper.
