Almost exactly like my regular yogurt recipe but much thicker and this time I added fresh real vanilla bean powder. I think this is THE BEST yogurt I have ever had. It’s smooth and creamy while being light and refreshing at the same time. Plus it’s the best probiotic yogurt you can eat, no store bought brand is going to come close to the amount of beneficial bacteria as real homemade kefir yogurt. Of course that means you need to first make you own milk kefir, which I highly recommend. You will need a hand mixer, mixer, food processor or really buff arms to adequately blend all the ingredients together until smooth.
2 cups kefir drained very well (looks lumpy all whey is drained out)
4 tablespoons raw honey
1-2 teaspoons raw vanilla powder
3/4 to 1 cup frozen or fresh fruit
While making the kefir let it sit long enough to be pretty thick. Drain it in a nut milk bag until all the whey is out. I do this by hanging the bag over a bowl for 1/2 hr to get the bulk of the whey out. Then I set my tied nut milk bag in a large glass bowl in the fridge and drain off the whey every now and then. Save that whey, so many uses! When it’s done draining it will be thick and chunky looking.
Mix all ingredients well and keep in the fridge. Keeps about 5 days if you don’t eat it all first.
