Toasted quinoa
My family loves this recipe, it healthy, easy and goes with everything. Toasting the quinoa gives it a nutty taste. I use my homemade bone broth to add flavor and for it’s nutritional value. If your vegan however you can ABSOLUTELY make this with water or vegetable stock.

Ingredients:
1 cup plain organic quinoa
2 cups organic chicken bone broth
Rinse quinoa well under cold water in a fine mesh strainer.
Get most if the water out by patting the bottom of the strainer or letting it set for a bit on a towel.
On the stove top heat a cast iron or stainless steel pan to medium and toast the quinoa, stirring frequently, until it’s a light brown color and has a nutty smell.
Then pour the toasted quinoa into a pot with the chicken broth. Bring to a boil and simmer for about 15 minutes or until broth is absorbed. Take off heat and fluff with a fork.
