Toasted quinoa

My family loves this recipe, it healthy, easy and goes with everything.   Toasting the quinoa gives it a nutty taste.   I use my homemade bone broth to add flavor and for it’s nutritional value.   I happen to have adrenal fatigue and found this post from Nourished Kitchen interesting

If your vegan however you can ABSOLUTELY make this with water or vegetable stock.

Enjoy and here’s to good health!

1 cup plain organic quinoa
2 cups organic chicken bone broth

Rinse quinoa well under cold water in a fine mesh strainer.
Get most if the water out by patting the bottom of the strainer or letting it set for a bit on a towel.
On the stove top heat a cast iron or stainless steel pan to medium and toast the quinoa, stirring frequently, until it’s a light brown color and has a nutty smell.

Then pour the toasted quinoa into a pot with the chicken broth.   Bring to a boil and simmer for about 15 minutes or until broth is absorbed.   Take off heat and fluff with a fork.
