Gluten free, nut butter cookies with quinoa flakes

Ingredients:
1/2 cup raw honey
1/3 cup rapadura sugar or other raw sugar
1 stick of real butter organic or raw
1/2 cup almond butter
1 teaspoon vanilla
1 organic egg lightly beaten
1/2 cup coconut flour
1/2 cup almond flour
3/4 cup quinoa flakes
1 tsp baking soda
Pinch of good salt

Heat oven to 350 and lightly grease pans with butter, I use glass. If you have metal I recommend trying natural parchment paper like this ..http://www.chefscatalog.com/product/22197-parchment-paper-cooking.aspx

Mix dry ingredients together in a small bowl.

In the mixer or by hand, beat honey, sugar and butter together.
Add peanut butter and mix,
Add egg and vanilla and mix until smooth.
Add the dry ingredients slowly and mix until thoroughly combined.

Drop onto pan or roll into small balls about teaspoon sized a couple of inches apart.
Flatten slightly with a fork if your dough is stiff.

Bake 14 minutes. Enjoy!
