Sweet potato planks! The kids love them and they are so good for you!!

I use all organic ingredients :
Sweet potatoes
Butter (enough to coat)
Turbinado or maple sugar (tablespoon)

Peel sweet potatoes for little kids or leave the skins on if you want for adults. Chop into the size of a steak fry and cover then with melted butter. Not microwaved, melt on stove top or in oven. Place the coated planks next to each other in a glass pan or other non toxic pan. I sprinkle with maple or tubinado sugar & roast in the oven @400 for 20-25 minutes. Delicious!!!
