It’s roasted chicken day, I do at least one a week, big money saver! I place an organic whole chicken in the crockpot with mirepoix providing I have carrots, celery, and onions. Salt and pepper, or add poultry seasoning or paprika whatever you like. This makes enough meat for at least 2 family meals and stock for a nice big batch of soup. I serve two veggies with it always, sometimes IF there are leftovers I put them in the soup. If I don’t have greens or carrots I make a filling potato soup, garnish with bacon and cheese if you have it. Btw Tubers hold most pesticides/chemicals do always buy organic.
To make a super nutritious stock, clean meat off the bird after cooking for about 5 hours on high, for meals. Then put back into the crockpot all bones, skin, joints (everything) also throw in the “gizzards, organs etc they pack inside the bird. Next add enough fresh water to fully cover everything and a tablespoon apple cider vinegar. (organic of course)
I find it tastes best to start with the mirepoix right under and around the chicken in the crockpot but you can add it in after you clean the meat. That is a mix of carrots, celery, and onion. Now get it hot (on high for an hour or so) and slow cook on low overnight or 10-12 hours. Strain with mesh strainer. I say it over and over this bone broth is incredibly healthy and is great for treating illness. Stores for months in freezer, 3 days in fridge. I use canning jars to store mine so that I can make small batches of soup for the kids on the fly with leftover veggies or I use it in sauces.
