#glutenfree #Mac-n-cheese with flax meal topping DELICIOUS!!!!

1 box ancient grains quinoa pasta elbows

Cheeses (feel free to change these up I used what I had in the house)
1 cup shredded cheddar
1 cup shredded mozzarella
1/2 cup shredded Gorgonzola
1/2 cup parmesan
1/2 cup cream cheese
1/2 cup creme fraiche or sour cream

1/4 cup flax meal for sprinkling on top (optional but healthy and delicious)

Preheat oven to 350 
Grease the bottom of a 9×9 or 9×13 glass dish (it doesn’t quite fill the 9×13 but it works just fine)

Cool pasta about 7 min

Drain and mix in the cheeses starting with the cream cheese ending with the stretchy mozzarella.

Put it in the glass pan and top with flax meal.
Bake for about 20 minutes.

My kids loved this as much as I did.
