Organic Strawberry Turbinado Jam
This is the very best strawberry jam I have ever tasted!!! And it’s much better for you than what you’ll find at the store. Make some now before the organic strawberries are gone.
4 Pints organic strawberries, wash and discard stems and hulls. Crush but do not puree. I used potato masher. Measure 4 cups.
1 large organic lemon about 1/4 cup juice
1 tsp organic butter
7 cups organic turbinado sugar
1 pouch liquid certo pectin
mix strawberries and lemon juice in a tall and large pot (need room to bring it to a vigorous boil) , stir in 7 cups sugar and add butter to reduce foaming. Bring to full boil, add pectin…bring back to boil until jam gets to 220 degrees. The package says one minute but I found mine took longer. Best to test the jam on a plate straight from the freezer. Plop a spoonful on the cold plate if it sets then you know its done.
Skim off foam and pour into 8 sterile jelly jars leaving about a 1/8-1/4 inch at the top. Put lids on tight! Place into canner for 10 minutes. Cool upright on towel.
My jam took two days to completely set, be patient. And if it doesn’t after that you can always reboil it and try again.
