Moist healthy breakfast muffins with molasses…great for kids

1 1/2 cup flour wheat or white
1 1/2 cup oat flour (grind oats in food processor)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
Dash salt

1 egg  room temp is best
1 tsp vanilla extract
1 cup mashed banana (about 2)
1/2 cup applesauce unsweetened (if sweetened omit cinnamon and nutmeg)
 1/2 cup molasses or honey or turbinado sugar etc. ( you can use less if you like)
1 cup blueberries or strawberries

Mix dry ingredients in small bowl set aside.
Mash bananas if making by hand or add to mixer on low with eggs and vanilla until blended, add applesauce and molasses (or honey/sugar) then dry ingredients from the small bowl.  Finally fold in berries by hand.  Scoop into muffin papers or greased tins.  I like to use an ice cream scoop.  Fill them up these don’t rise much.

Bake 325 for 25-30 minutes
