The zucchini bread

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda

1/2 teaspoon baking powder
1 1/2 tsp ground cinnamon
1 1/2 regular eggs (2 small or one jumbo)
1/2cup vegetable oil or applesauce for a healthier loaf
1/2 cup white sugar
1/2 cup brown sugar
1 1/2 teaspoons vanilla extract
1 heaping cup grated zucchini

Grease a 8 x 4 inch pan. Preheat oven to 325 degrees F (165 degrees C).
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined. Pour batter into prepared pan.
Bake for 50 minutes, or until toothpick inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
