Strawberry whole wheat and oatmeal muffins

I pint fresh organic strawberries chopped in food processor
I cup whole wheat flour
I cup oatmeal
3/4 cup organic rice milk ( or milk of choice)
1/2 cup organic brown sugar
1/4 veg oil or sub yogurt, butter, etc
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg beaten

Preheat oven to 425 Grease 12 muffin cups. In small bowl mix oats and milk let sit for 20 mins.
In a large bowl, mix flour, baking powder, baking soda, cinnamon and salt. In a separate bowl, whisk together egg, oil and sugar. Mix in strawberries. Stir strawberry mixture into flour mixture combined completely. Add oat mixture and stir just until mixed. Spoon (I use a ice cream scoop) into prepared muffin cups.
Bake 18 to 20 minutes in the preheated oven, until a knife inserted in the center of a muffin comes out clean.

Ps they don’t rise much so feel free to fill up the cups
